Aromatic Duck Chilli Con Carne
A delicious twist on the classic chilli con carne, substituting our aromatic duck for beef. (Serves 4)
Ingredients
- 1/2 aromatic duck, roasted & shredded as per instructions
- 100g diced cooking chorizo
- 1 red onion
- 2 cloves garlic
- 1 tin chopped tomatoes
- 1 tin black beans beans
- 1 tbsp tomato puree
- 1/2 tbsp chipotle paste
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp smoked paprika
- lime, fresh coriander & sour cream to garnish
Method
- Finely slice the onion and softly fry with a little oil in a pan
- Peel & crush the garlic, and add to the onions with the chorizo and cook for 3-4 mins
- Add the shredded duck, cumin, oregano, paprika, tomato paste, chipotle paste, black beans and chopped tomatoes and simmer for 20 mins, add a little water if over reduces
- Season with salt, pepper & fresh lime to taste
- Serve with sour cream, fresh coriander & sweet potato jackets
