Cooking a big, beautiful festive bird means that you are left over with lots of delicious meat to enjoy the days after Christmas, more likely than not you will also have an array of vegetables, potatoes, cranberry sauce and gravy left over too. We have put together a selection of recipes that make the best use of your leftovers and will help you enjoy them all over again….

Butter Turkey Curry

 

This is a delicious, warming, hearty curry that is made with cooked turkey, chicken, goose or duck meat. Fry garlic and onions, mix with spices and then add the meat, tomato puree and stock. Finish with yoghurt and garnish with flaked almonds. For the full Butter Turkey Curry click here.

 

 

 

Leftover Pie

 

Use all of your leftover meat, stuffing and vegetables in this Boxing Day Pie. The trick to this recipe is to add the stuffing on top of the meat and vegetables to stop the pastry from sinking. Duck and roast potato hash

 

Serve this with a poached duck (or hen) egg on the top for a yummy boxing day Brunch. Mix the leftover duck, crushed roast potatoes, greens, 2 eggs and flour and fry for 5 minutes, then turn over and place in oven to finish off. Top with a poached egg. Duck Biryani

 

Make this tasty supper with leftover duck (or turkey/goose). It is very simple to make and uses store cupboard ingredients. Fry onions, garlic, bay leaf, cardamom and cinnamon until the onion softens. Stir in rice, meat, raisins, curry paste and stock and bring to the boil before lowering the heat and simmering for 5 minutes. Leave to stand for 10 minutes and then serve.
