How to cook Duck Crown

Step by step instructions
Season the duck crown with salt and pepper.
Place the duck crown on an oven tray.
Place the duck crown on the middle oven shelf and cook at 200°C/ Fan 180°C/ Gas 6 for 50 minutes per 1kg.
Cover the duck crown with foil and allow it to rest for 15 minutes before carving.
Carve meat and then serve.

Save the fat from your roast duck to use for making delicious crispy potatoes.
It is very important to rest your duck before serving; this equilibrates the temperature and spreads the moisture around.
You can easily make duck crackling by cutting the skin into thin strips and frying until crisp. Use this on salads or as part of your favourite duck recipe.
Remove your whole duck from the refrigerator at least 30 minutes before cooking.
