Summer dining inspiration

Duck makes a great addition to salads and other lighter meals so is perfect for enjoying in the warmer weather.

Duck breast, green leaves and walnut salad with a french dressing.

Cook a handful of new potatoes and pan fry duck breast. Make the dressing by whisking vinegar, honey, mustard and seasoning. Add olive and walnut oils to the mixture little by little and season to taste. Then set aside. While the duck is resting cook green beans and then add the dressing to salad leaves and the cooked potatoes. Arrange the slices of duck on to the salad. Snip some chives onto the dish and sprinkle walnuts on top.

 

Stir fry duck with black bean sauce

Stir frys are a light, mid week light supper idea. Stir fry strips of skinless duck breast fillet in a wok and then set aside. Bring the wok back to the heat and add onions and a splash of water, then add peppers, ginger and garlic and stir fry for another minute. Afterwards, add the light soy and spinach/ pak choi and stir fry for one more minute. Now put in black bean sauce and bring up to heat until bubbling. Return the duck to the wok and cook for a further minute. Mix well and serve with plain rice. Garnish with spring onion.
