Spotlight on speciality poultry

Although duck is what we are most well known for we also supply other poultry products including guinea fowl. poussin, turkey and goose.

We have put together this guide to our speciality poultry for when you feel like trying something different!

Guinea Fowl

Often described as how chicken ‘used to taste’ this is a traditional bird, it is simple to roast and has a subtle gamey flavour. The meat is slightly darker than chicken and goes well with roasted vegetables and a redcurrant jus or pan gravy.  Our guinea fowl serve two so ideal for sharing with a loved one, top with a bacon lattice to help keep the moisture of the meat inside. You can find our Guinea Fowl in Tesco, Morrisons or Ocado.

 

POUSSIN

Poussin is a butchers term for a young chicken. Our poussin are a breed that is naturally slow-growing, so you get meat that’s young and tender yet thoroughly flavourful. The Gressingham poussin are grown on locally-approved farms by our friends the Leon family in Brittany, France. We supply poussin, corn fed poussin for a slightly richer flavour or spatchcock poussin with a salt and pepper seasoning. The term “Spatchcock” means the bird has been cut along the spine so that it can be spread flat for a fast and even cook.

 

TURKEY

The perfect centrepiece to your festive table our turkeys are succulent, tasty and easy to carve. All grown on Red Tractor assured farms in East Anglia and available to order from the supermarkets and butchers from November.

 

 

 

 

 

 

GOOSE

Goose are very traditional Christmas birds, they are seasonal breeders with their first egg being laid at the onset of Spring, on St Valentine’s Day. The eggs hatch by Easter and the birds grow through the summer ready for Christmas. Geese are a richer, full flavoured gamier bird with darker meat. Great have as an alternative or addition to turkey. Goose fat also makes some of the best roast potatoes. You can find our Gressingham geese in Morrisons, Sainsbury’s. Asda, Tesco and Ocado this Christmas.
