Fit for an Olympian

This weekend marked the start of the Olympics and as a result many of us have been inspired to get fit and make some healthier food choices. A common misconception about duck is that it is fatty and unhealthy, this is completely false and duck is actually one of the healthier meats that you can choose. In fact a skinless duck fillet has less calories and less than half the fat of a skinless chicken fillet (a skinless duck fillet has 92kcal and 1.3g of fat per 100g compared to a skinless chicken fillet that has 120kcal and 3.2g of fat per 100g). It is a very versatile meat and can be paired with many different flavour profiles. You can make your own duck steak like the one pictured by removing the skin from the duck breast, slicing it in two (lengthways) and then pan frying until cooked to your liking. Serve in a pitta with a side salad. For another healthy option you can make a lime and coriander marinade for duck breasts with a few simple ingredients, for the full recipe click HERE.
