Duck on the BBQ!

Although the weather has been on the soggy side this week summer is here and the forecast is looking brighter for the weekend. You may even be tempted to get the BBQ out in which case we have some handy tips and ideas for you.

  1. Our first idea does not even require a barbeque. Our Memphis BBQ Pulled duck legs are slow cooked and take just 35 minutes to heat in the oven. They have a Southern American style BBQ sauce that has a chilli kick. Shred and serve in a delicious bun with fries and an Asian slaw. It is perfect for a mid-week treat or for weekend casual dining.
  2. Secondly our poussin make a great addition to BBQs. Firstly ‘spatchcock’ the poussin by removing the spine of the bird and then flattening out onto a chopping board. Add any seasoning (we love lemon or piri piri), wrap in foil, cook over a medium heat for 25 minutes and then remove from the foil and cook for a further 5-10 minutes turning often. Serve with jewelled rice and a side salad.
