Duck in a heatwave!

With temperatures staying high for the rest of the week the last thing we feel like doing is having the oven on for any length of time. There are lots of ways you can enjoy duck without having to get hot and sweaty in the kitchen!

A tasty stir fry is easy to prepare and only takes a few minutes to pan fry on the hob. Simply pick up a packet of duck mini fillets, or alternatively get a pack of duck breasts, remove the skin and slice into strips. Pan fry the duck in a wok for 1 minute and then set aside in a warm place. Place all of your stir fry vegetables (our favourites are pak choi, red peppers and onions) in the wok and fry for another minute. Add some black bean sauce and soy sauce and return the duck to the wok and cook for a further minute. Serve with rice and spring onions.

Duck is also great in a salad, get some duck breasts and place skin side down in a cold pan on the hob, cook for 6-10 minutes until golden brown, seal the meat on the other side and then place in your oven (pre-heated to 180oC, 160oC Fan, Gas mark 4) for 6-15 minutes depending on how you like your duck cooked. Slice and assemble on top of some chopped mango, avocado, peaches and some mixed lettuce leaves.

For a complete ‘no cook’ meal try some smoked duck breast with salad. You can find smoked duck breast in your local farm shop or deli and it has a wonderful, rich flavour. Pair this with feta cheese and lettuce leaves for a tasty supper.
