Turkey, Cranberry and Stilton Tart

A fantastic way to use up any leftovers combining the classic festive flavours! It cooks in 55 minutes and serves up to 6 people.

You will need:

• Roll of pre-bought shortcrust pastry• 300g leftover turkey meat• 200g left over stilton• 75g left over cranberry sauce• 4 eggs• 350ml double cream• 150ml milk• 1 head of celery, peeled and sliced at an angle• 1/2 red onion, finely sliced• 85g walnut pieces• Juice of 1 orange• 2 tbsp olive oil• 1 tbsp balsamic syrup• Salt and pepper

Duck and Potato Penang Curry, Steamed Rice and Mango Chutney

Get creative with your leftovers and a few extra flavours! Cooks in just 30 minutes and serves 4 people.

You will need:

• 1 onion, sliced• 2 large potatoes, peeled and cut into chunks (or 8 leftover roast potatoes)• 1 tbsp thai red curry paste• 1 tin coconut milk• 1 tbsp palm sugar• 1 tbsp fish sauce• 4 lime leaves• 2 tbsp roasted peanuts• 1 head park choy• leftover duck meat (approx. 500g)• lime, Thai basil and fresh coriander to garnish• basmati rice and mango chutney to serve!
