Quince Sauce

  • 3-4 quinces, peeled, cored and diced
  • Dash of mild olive oil
  • Zest and juice of 1 lemon
  • 125ml caster sugar
  • 50g butter

1. Place all of the above into a saucepan and simmer for approximately 45 minutes, stirring occasionally.

2. The sauce is ready when the quinces have nearly broken down – try to keep a few pieces in for texture.  

3. Taste and adjust sweetness if necessary.
