Cajun spiced Gressingham Duck mini fillets

  • 1 pack of Gressingham Duck mini fillets
  • 1 tbsp vegetable oil
  • Cajun spice mix

Preparation

Mix the mini fillets with a tbsp of vegetable oil and 2 tsp of Cajun mix. For best results, leave to marinade for 30 minutes so the spices absorb into the meat.

Method

Place a griddle pan or frying pan onto a high heat and add a little oil. When the pan is starting to smoke, lay the mini fillets in the pan. Cook for one minute and then turn them over to cook for a further minute (cook for a little longer if you like your meat well-done).

Serving

Delicious served with a salad, add some mayonnaise for a tasty sandwich or serve with a dipping sauce.
