Bread Sauce

  • 1 onion, peeled
  • 4 cloves
  • sprig thyme
  • few black peppercorn
  • ½ tsp salt
  • 75g breadcrumbs
  • bay leaf
  • 30g butter
  • 700ml milk

1. Stud the onion with cloves and put into a saucepan with the bay leaf, milk, herbs and salt.

2. Bring to the boil and simmer for 2 minutes then set aside until you need to serve.

3. To finish, strain the milk into another pan, bring back up to heat and add in the butter and breadcrumbs, check seasoning and serve with the duck.
